Koakoa Limoncello Spritzer

With the pressures this week of getting the kids ready to go back to school, we reckon a Limoncello Spritzer is the way to go. Simple, classy, and beautiful! We gave this a go on a warm Kapiti Coast evening and have now added it to our 'go-to' list for the summer.
You could also try replacing the Limoncello with Orangecello to get that summer taste of Gisborne Oranges.

INGREDIENTS
- 60 ml Koakoa Limoncello (chilled)
- 250 ml Prosecco (chilled)
- Soda water
- 2 Slices of Lemon
INSTRUCTIONS
Divide limoncello and prosecco between two of your best glasses.Top up with as much prosecco as you'd like. Give each glass a squeeze of fresh lemon juice, stir, and add ice.
Garnish with fresh lemon slices if desired.
