Autumn rhubarb cocktail
Anyone who loves rhubarb, this one's for you!
For the rhubarb syrup
- 85g caster sugar
- 300g of chopped rhubarb
- 75ml of water
For the cocktail itself
- 100ml of The Bond Store Kāpiti Coast Vodka
- 100ml of already made rhubarb syrup
- 1 length of rhubarb
- 30ml of advocaat
- 75ml of lemonade
For the rhubarb syrup first place the caster sugar and water in a saucepan and heat gently, (make sure not to let it bubble!) do this until the sugar disappears. Tip in the chopped rhubarb, cover with a lid and increase the heat as to let it begin to boil. Simmer covered for five minutes until the rhubarb is very tender.
Turn off the heat and place the rhubarb mix into a sieve into a bowl. Make sure to get all of the delicious juices out into the bowl, but not the pulp, nobody wants that! Tip back into the pan and boil rapidly for a few minutes until syrupy. Pour into a jug or bowl and leave to cool.
Now, for the cocktail itself shake the Kāpiti Coast Vodka and 100ml of the rhubarb syrup and ice together until mixed and chilled down. Create small shreds of your rhubarb using a potato peeler and place into iced water to make them curl.
Then, separately whisk together advocaat and and lemonade with ice. Divide the Kāpiti Coast Vodka and rhubarb mix between the four glasses with a sive to catch the ice. Then carefully pour 25 ml of advocaat mixture into each glass over an upside down spoon (the mixture should float on the surface of the vodka syrup mixture). Drain the rhubarb shreds well and use to garnish your cocktails.
